Virtual Cook Along with Hannah Wise, RD

Join Hannah Wise, RD, for a cook-along event on Thursday, July 8, at 4:30 pm or 6 pm. She will be demonstrating how to make a heart-healthy summer squash recipe along with tips for getting kids to help in the kitchen and try new foods.

The recipes are below so you can be ready for this fun, hands-on cook-along! Email Hannah at hwise@brightsideup.org to receive the zoom participation link.

There is no charge to attend. All participants will receive a free cooking gadget.

SUMMER SQUASH & RICE

Ingredients:

  • 2 tablespoons vegetable oil

  • 2 garlic cloves, minced

  • 1 onion, chopped

  • 3 green or yellow summer squash, chopped

  • 2 cups hot, cooked rice

  • 1 tablespoon grated Parmesan cheese

Directions:

1. In a large frying pan, heat oil over medium heat.

2. Add garlic and onions. Cook for 1 minute, stirring often.

3. Add summer squash. Cook until slightly soft, stirring often.

4. Stir mixture into the hot cooked rice. Enjoy!

5. Refrigerate leftovers.
